• Our Favorite Fall Vegetable: Delicata Squash

    With it being fall, we love roasting everything we can. My family and I recently fell in love with delicata squash. I mean, to the point where I was eating it for breakfast and my seven year old was asking for it during snack time. Here’s why we love it: 💛Easy to prep: Just scrub well, cut in half lengthwise, scoop out sides, then slice into half moon shapes.   • Winter in July

    We Minnesotans know winters can be long, but we make adaptations so we can make the best of it. We invest in proper winter gear so we can enjoy the sunny outdoors even when it’s below freezing. We buy snowblowers for our driveways and ice scrapers for our cars so we can still get around town. Dr. Michael Osterholm, an epidemiologist at the University of Minnesota, recently said this COVID-19 pandemic is like a very long Minnesota winter, and we just went through a surprise late October blizzard.
