Our Favorite Fall Vegetable: Delicata Squash

With it being fall, we love roasting everything we can. My family and I recently fell in love with delicata squash. I mean, to the point where I was eating it for breakfast and my seven year old was asking for it during snack time.

Here’s why we love it:
💛Easy to prep: Just scrub well, cut in half lengthwise, scoop out sides, then slice into half moon shapes. No peeling needed!
💛Spices make it better: after tossing with avocado oil and salt, you can add whatever spices you’d like. The kids like it with cinnamon. I sprinkled turmeric on my last batch. You could also try Italian seasoning, curry powder, cumin.
💛Easy to roast: Preheat oven to 425. Line baking sheet with parchment paper. Roast for approximately 30-40 minutes, flipping pieces halfway through cooking time.
💛Easy to reheat: You can make a large batch, then reheat when needed in the microwave or toaster oven for an easy side dish (or breakfast, or snack, like our family!)
💛Packed with goodness for your body: While one cup of delicata has about 18g of carbohydrates, about one third comes from fiber. It’s also rich in antioxidants, vitamin A, and other nutrients.
